Nestled among the foothills of Les Alpilles, the vines are surrounded by a rocky and wild landscape—the clay and limestone soil retains moisture for the arid summer months, the mistral blows half the year, and garrigue is seemingly everywhere. It is here that in the early 1980s Dominique Hauvette, seeking more sunshine, left her job as a lawyer in the Savoie, rediscovered her passion for raising horses, and began studying oenology. If there is one wine to know Hauvette by, it's “Cornaline.” This rouge has been compared to a blend of Trévallon, Tempier, and Vieux Télégraphe. Composed of 50% Grenache, 30% Syrah, and 20% Cabernet Sauvignon, with an average vine age of 40 years, it is vinified in foudre. The blend of these grapes gives this wine its unique identity. Dark fruit, fig, black tea, spice, all come together in a full-bodied, but balanced style. Grill a flank steak and make a vinaigrette to pour over the top, with anchovy fillets, garlic, parsley, lemon, and more—simple, yet packed with flavor to complement this great wine.
